The successor to BLT Steak and BLT Fish, this steakhouse is at the location of the former Union Pacific restaurant. Comfy banquettes, a handsome bar and an open kitchen are the architectural features here, but you're really coming for the USDA Prime and certified dry angus beef, which are dry-aged on the premises. There's the requisite 16 oz. New York strip, a 12 oz. filet mignon, a Porterhouse prime that weighs in at a stunning 36 oz. and feeds two, not to mention the others, which are all generally dry-aged in-house for 28 days. As at the other BLTs, you choose your own sauces—a diabolical béarnaise, for instance, and the brilliant peppercorn, not to mention oddities like blue cheese and chimichurri—and side dishes, which run the gamut from onion rings and potatoes au gratin to creamed spinach and truffled mashed potatoes. The entree list isn't all steak, of course: there are braised short ribs with veal jus that will give any steak a run for its money, rack of lamb with an herb crust, a weighty veal chop with garlic confit, and that's without mentioning the seafood.
